Built from scratch the winery has the most modern equipment which enable wine production using the most recent methodology, making use whenever desirable and possible the traditional technology which includes a long maceration (the equivalent of “pisas” the crushing with the feet). The fermentation of the grape juice can also be controlled by warming or cooling of the wine vessels.
